Firehouse Caramel Corn (10 Gallon Cooker)

Turn up the heat with a caramel corn that brings the intensity! If you want sweetness with a kick Firehouse Caramel Corn delivers the flavor combo you crave.

Ingredients

  • 8 gallons of mushroom popcorn popped in white coconut oil – no salt
  • 6 oz of Five Alarm Blazen (more or less to taste)
  • 2 pouches of Caramel Corn Treat Concentrate Mix (#2094)
  • 8 cups of brown sugar
  • 2 – 4 oz oil pouches
  • 24 oz of water
  • 1 lb (4 sticks) unsalted butter
  • Free-N-Easy spray

Directions

  • Add 8 gallons of popped popcorn to the tumbler.
  • Turn on tumbler.
  • Slowly add the Five Alarm Blazen to the popcorn.
  • Once tumbled, set to the side.
  • Then add oil to the cooker first. Then add Caramel Corn Mix, brown sugar, and water. Avoid pouring ingredients on inside paddles.
  • Cover cooker with lid and turn on the Heat/Motor switch.
  • Around 5-10 minutes into cooking, the cooker will begin to steam. Remove the lid and allow the steam to escape from the cooker. Note: When removing the lid, allow the condensation on the lid to drain back into the cooker.
  • Add butter. Replace lid.
  • When buzzer sounds, turn off Heat/Motor switch and turn on Motor Only switch.
  • Add Five Alarm popped popcorn in machine and tilt mixer to first notch.
  • Spray Free-N-Easy separator on inside wall of mixer and blades (roughly 15-20 sprays). Try not to spray directly on popcorn. Tilt mixer to second notch.
  • Allow popcorn to mix/coat completely. Should take several minutes.
  • Dump popcorn onto cooling tray. (Use caution when dumping. Wear personal protective equipment on hands to protect from heat.) Make sure there is no caramel corn left in cooker when dumping.
  • Turn off Motor Only switch.
  • Spread caramel corn evenly on tray. Turn on cooling tray and continue to gently separate corn.

 

NOTES:

  • When separating/cooling caramel corn, use aluminum popcorn scoop face down on the cooling tray. This will avoid breaking the corn into pieces.
